'King of Funk' Segues into Exciting Restaurant Endeavor

Duck Tacos, Plantains Done Three Ways, Tuna with Adoba, Cilantro and Orange Aioli and Mussels and Beer done with chorizo sausage, shrimp, Serrano ham, tomato and spinach.

The menu also lists three Spanish flatbreads as well as pastas, paellas and large plates that can be shared or consumed by a single diner. Bootsy’s complete menu is listed on the restaurant website www.jeffruby.com/bootsy.

"One of the biggest compliments I get is from people who’ve eaten in Spain who say that my flavors are right on," said chef Rangel. "I try to keep my food simple and modest so that people get it, but at the same time try to make it creative, fun and playful."

You might find the addition of sushi a bit off kilter on Bootsy’s Spanish-focused bill of fare, but the juxtaposition is not so strange when you consider that ceviche (another preparation of raw seafood) is part of Hispanic culinary tradition.

"Asian workers helped build the railroads of Peru and Ecuador, so the native populations familiar with ceviche readily understood the concept of sushi," said chef Rangel.

You might also wonder how someone who spent the majority of his life as a musician from age 17 when he played bass for James Brown made the move to the restaurant business.
